First things first:
Last night the local news station ran a story on these peculiar booming noises people have been hearing lately. They flashed to a screen shot of their facebook page where viewers were invited to weigh in on what could be causing the strange sounds. Guess which post they zoomed in on?
The one that said, "I farted."
Then they just went on with the story like nothing had happened. I laughed for days.
Ok, now to the other stuff.
I have committed to a 100% clean diet for 21 days and am pretty pumped. Also, by being prepared, it hasn't been a huge deal. So not only am I finally participating in What I ate Wednesday correctly (with healthy options rather than Christmas candy and randomness), I am also setting myself up for some healthy habits which will definitely not be 100% all year (hello! my mom makes home made Coconut cake for my birthday!!), but hopefully pretty close.

Breakfast: Quinoa with mixed seeds and figs
Lunch: tofu stir fry shared by my friend Renee, sweet potato and sugar snap peas (picture from the night before when Jody tried and LOVED the peas)
I wasn't very hungry at dinner so made some juice, but a little later I whipped up these date snacks we'd had at a Christmas party for Jody and couldn't resist trying a few (excluding the Brie).
Pitted Medjool date, wedge of Brie (or not), pecan half - perfection!!
A little later I had this overwhelming craving for granola! I don't buy granola very often because it's just like dry cereal to me. Which means I cram into my mouth by the handful until it's all gone.
That was Monday night...by last night...it was gone.
Go. try. it. now.
Orange Date Granola
1/4 cup chopped almonds
1/4 cup chopped walnuts
1/2 cup rolled oats
1/4 cup raisins
1/8 cup sunflower seeds
5 or 6 chopped figs
2 tbsp. water
1/2 cup dried or Medjool dates
2 tbsp. fresh orange juice
Preheat oven to 350 and thoroughly cover spray baking sheet with olive oil. Place first six ingredients in mixing bowl. Boil dates and water in small saucepan until dates begin to break apart. Add orange juice to dates and stir until smooth (can use a food processor or immersion blender if needed. Pour over dry ingredients and stir until well coated (will be clumpy). Spread onto prepared baking sheet and bake 3-5 minutes. Flip and bake another 3-5 minutes. Watch carefully - I burned some of mine!!

ReplyDeleteGreat way to start the new year eating healthy. I ordered about five healthier eating cook books and three came in today: Mayoclinic, Canyon Ranch Cooks and Whole Life Nutrition Cookbook. The Whole Life Nutrition is a replacement for one a gave a friend so I know that one is great.
I use Whole Life nutrition too!
